CAM completed annual on-site audit of sub-concession of aircraft catering services at MIA Continued advancement in food safety and quality management

To ensure that the sub-concessionaire of aircraft catering services, Macau Catering Services Company Limited (MCS), at Macau International Airport consistently meets industry standards and contractual requirements in food quality and food safety, Macau International Airport Company Limited (CAM) annually commissions a professionally accredited third-party auditing organization to conduct online and on-site audits of MCS.

 

On 21st – 22nd October 2025, CAM engaged with Medina Food Inc. (MQ), a Canada-based international audit firm with over 40 years of experience and recognized leadership in airline catering audits, to conduct a two-day on-site audit of MCS. During the audit, CAM representative and MQ auditor visited the catering facility to conduct a comprehensive review of the entire in-flight catering process. The review covered key areas included procurement procedures and receiving processes, inventory management and menu specifications, ingredient handling and food preparation, tray setup and meal dispatch, customer communication and service feedback.

 

The audit was aimed to rigorously evaluate MCS’s implementation of food quality and food safety through on-site verification, while encouraging continuous improvement of operational workflows to enhance overall service standards. CAM acknowledged MCS’s proactive collaboration and professional performance throughout the audit, reflecting its strong commitment to maintaining high standards in airline catering. CAM remains dedicated to its supervisory responsibilities and will continue to conduct regular audits and professional evaluations to ensure that in-flight catering services steadily and align with international standards, providing passengers with safe, reliable, and high-quality dining experience in the air.
