CAM completed annual audit of sub-concession of aircraft catering services at MIA further consolidate achievements in food safety and quality management

Macau International Airport Company Limited (CAM) has remained steadfast in ensuring that the sub concessionaire of aircraft catering services, Macau Catering Services Company Limited (MCS), consistently complies with international standards and contractual requirements in food safety and food quality.

To fulfill its supervisory responsibilities and reinforce food safety and quality management, CAM engages Medina Food Inc. (MQ) annually, a Canada-based auditing organization internationally acclaimed for its expertise in airline catering audits, to conduct at least two audits of MCS.

From 3^rd to 4^th September 2026, CAM representative and MQ auditors visited the MCS catering facility to conduct a two-day audit. The team comprehensively examined and reviewed each stage of the in-flight catering process. The review covered key areas included procurement and receiving, inventory management and menu specifications, ingredient handling and food preparation, tray setup and meal dispatch, as well as customer communication and service feedback.

This audit not only focused on verifying MCS’s performance in food safety and quality management through rigorous on-site checks, but also aimed to drive continuous improvement of its processes and standards, thereby further enhancing overall service levels. CAM highly commended MCS’s proactive cooperation and professionalism throughout the audit, recognizing its firm commitment to excellence in airline catering quality.

Looking ahead, CAM will continue to uphold its supervisory responsibilities by conducting regular audits and professional evaluations, further consolidating food safety and quality management outcomes.

Through these efforts, CAM ensures that the sub-concessionaire of aircraft catering services consistently complies with international airline catering standards, delivering passengers a safe, reliable, and refined in-flight dining experience.
